冰豆腐炆素:

材料:
硬豆腐2磚
冬菇(大)3隻
雪耳1個
雲耳1兩
甜椒1隻
素食蠔油適量

處理:
1. 硬豆腐切成1“ x1“ x 1“。
2. 放豆腐入有蓋膠盒,雪至硬身,大約雪8小時。
3. 豆腐用清水浸2分鐘,揸乾水。
4. 預備醬汁:
a. 素蠔油2茶匙
b. 豉油2茶匙
c. 糖1/2茶匙
d. 水200毫升
攪勻。
5. 甜椒,切大粒。

烹調:
1. 中火在鑊中燒熱1湯匙油。
2. 放冬菇、雲耳及雪耳爆香。
3. 加入冰豆腐,炒勻。
4. 加入醬汁及100毫升水。
5. 冚蓋,炆10分鐘。
6. 加入2茶匙素蠔油,炒勻。
7. 最後加入甜椒粒,炒勻,放上碟,加入1茶匙麻油,完成。

Braised vegetables with iced tofu:

Ingredients:
Hard tofu 2 cubes
Mushrooms (large) 3 Nos.
Snow fungus 1 No.
Black fungus 1 tael
Sweet chili 1 No.
Vegetarian oyster sauce appropriate amount

Preparation:
1. Cut tofu with size 1" x 1" x 1".
2. Put tofu in a plastic storage box with lid. Refrigerate until it is hard. This takes about 8 hours' time.
3. Soak tofu in tap water for 2 minutes. Squeeze it.
4. Prepare the sauce:
a. Vegetarian oyster sauce 2 tsp
b. Light soya sauce 2 tsp
c. Sugar 1/2 tsp
d. Water 200ml
Mix well.
5. Sweet chili, dice in big cubes.

Steps:
1. Heat up 1 tbsp oil at medium flame in wok.
2. Fry mushrooms, black fungus and snow fungus.
3. Put iced tofu, fry well.
4. Add the sauce and 100ml water.
5. Braise for 10 minutes with the lid on pot.
6. Add 2 tsp vegetarian oyster sauce. Fry well.
7. Finally, fry well with sweet chilli. Put on plate. Add 1 tsp sesame oil. Serve.
